You have to try this potato cucumber salad with a tangy delicious twist. You’ll want to add this to your regular rotation. It’s that good.

Simmer the chopped ginger and onions in a bit of water with soy sauce until they are tender. Then add in the potatoes. Cook until done: when they break easily with. Drain the potatoes, ginger and onions and allow to cool. Once they are cool, combine with chopped cucumbers and stir in fresh squeezed lime juice.
